MANGO COCONUT & WHITE CHOC COOKIES

 With summer vibes in the air, these delish cookies are perfect snack to an iced coffee or a hot cuppa in the evening.

The touch of white chocolate adds a little bit of naughtiness, but a mostly clean recipe!

INGREDIENTS:
1/4 cup coconut oil (melted)
1/4 cup of maple syrup
2 tablespoon nut milk ( I used macadamia)
1 teaspoon baking powder
1 cup almond meal
1 cup LSA
1/2 teaspoon cinnamon powder
1/4 cup of dried mango (diced)
1/4 cup shredded coconut (and some for sprinkling on top)
1/4 cup white chocolate chips

HOW TO:
Preheat oven to 170 degrees, line baking tray with paper.
Combine Coconut Oil and Maple Syrup into a bowl and cream together with an electric beater
Once smooth and creamy add in milk and whisk together.
Add the remaining ingredients, folding all til combined with spatula.
Batter will be quite moist, spoon heaped tablespoon portions of batter into balls.
Place 12 balls of mixture on the tray, gently press each ball down to form cookie shape.
Sprinkle coconut on top of each cookie, bake approx 12 mins or until golden.
