BANANA, DATE & WALNUT MUFFINS

Gluten-free and paleo friendly… the perfect healthy treat for you or your kids!

Ingredients:

  • 2 cups almond meal
  • 2 tsp baking soda
  • 3 organic eggs
  • 2-3 ripe bananas
  • 1 cup fresh dates,
    chopped (make sure they are pitted)
  • 1/4 cup coconut oil, melted.
  • 3/4 cup walnuts, chopped/crushed
  • pinch of sea salt
  • 1 tbsp cinnamon
How to:

  • Preheat oven to 180.
  • In a large bowl, combine flour, baking soda, salt and cinnamon.
  • In a high speed blender or vitamix, combine dates, bananas, eggs and oil.
  • Add mixture from blender to dry mixture in the large bowl, combine thoroughly.
  • Fold in walnuts.
  • Divide mixture into muffin tin
  • Top with banana slices
  • Bake for approx 25 minutes.
